4boneless skinless chicken breasts (5 to 6 ounces each)
1tbspolive oil
1/4tsppaprika
1/4tspgarlic powder
1/4tspsalt
1/4tspblack pepper
4ozcream cheese, softened
2tbspparmesan cheese
1clovegarlic, minced
1cupfresh spinach, finely chopped
3tbspsun-dried tomatoes, chopped
1/2tspItalian seasoning
Instructions
Preheat the air fryer to 360°F (182°C).
In a medium bowl, mix cream cheese, parmesan, garlic, spinach, sun-dried tomatoes, and Italian seasoning until well combined.
Slice each chicken breast horizontally to create a pocket, being careful not to cut through.
Fill each chicken breast with the prepared filling. Use toothpicks to secure edges if needed.
Rub chicken with olive oil and sprinkle both sides with paprika, garlic powder, salt, and pepper.
Place stuffed chicken breasts in the air fryer basket in a single layer. Cook for 18–22 minutes or until the internal temperature reaches 165°F (74°C).
Let the chicken rest a few minutes before slicing or serving.
Notes
Don't overfill the pockets to prevent leakage. Use toothpicks if needed to secure. Serve with salad, rice, or steamed vegetables. Freeze leftovers for up to 3 months.
