  • 1 lb Ground beef, lean You can substitute with ground turkey or chicken.
  • 3 cups Beef stock Use vegetable broth for a vegetarian option.
  • 15 oz Tomatoes, canned
  • 30 oz Tomato sauce, canned
  • 1 tbsp Worcestershire sauce

Vegetables and Seasonings

  • 4 cups Green cabbage
  • 2 cloves Garlic Minced.
  • 1 small Green pepper Chopped.
  • 1 small Onion Chopped.
  • 3 tbsp Parsley, fresh Chopped, plus more for garnish.
  • 1 tsp Thyme, fresh
  • 1 1/2 tbsp Brown sugar
  • Salt and pepper Salt and pepper To taste.

Carbohydrates

  • 1/2 cup White rice, long grain

  • 1 tbsp Olive oil

Instructions
 

Cooking

  • In a large pot, heat the olive oil over medium heat.
  • Add the ground beef and cook until browned.
  • Stir in the garlic, onion, and green pepper; sauté until the vegetables are tender.
  • Add the cabbage and cook until slightly wilted.
  • Pour in the beef stock and canned tomatoes.
  • Stir in the tomato sauce, Worcestershire sauce, brown sugar, thyme, parsley, and white rice.
  • Season with salt and pepper to taste.
  • Bring to a boil, then reduce heat and simmer for about 20-25 minutes until the rice is cooked and the flavors meld.
  • Serve hot, garnished with additional parsley if desired.

Notes

Store leftover soup in an airtight container in the fridge for 3-4 days, or freeze for up to 3 months. This soup can be made ahead of time as it tastes better after the flavors meld.
