- 3 cups cooked boneless skinless chicken breasts, shredded about 1.5 pounds raw
- 1 cup basil pesto store-bought or homemade
- 1 cup mayonnaise full-fat
- 1 cup shredded Parmesan cheese divided
- 2 cups cherry tomatoes halved
- 16 ounces fresh mozzarella cheese sliced into rounds
- 1 teaspoon salt or to taste
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons fresh basil leaves chopped for garnish
- 1 tablespoon balsamic glaze for drizzling, optional
Preheat oven to 400°F (200°C). Lightly grease a 2-quart baking dish with cooking spray or olive oil.
In a large bowl, combine shredded chicken, basil pesto, mayonnaise, and 1/2 cup Parmesan cheese. Add salt and pepper, stirring until evenly coated.
Transfer chicken mixture to prepared baking dish and spread into an even layer.
Arrange halved cherry tomatoes cut-side up over the chicken mixture. Layer fresh mozzarella slices on top, covering the surface completely.
Sprinkle remaining Parmesan cheese over the top.
Bake for 20-22 minutes until bubbly and golden brown on top. Let rest for 5 minutes before serving.
Garnish with fresh basil and drizzle with balsamic glaze if desired. Serve warm.
