Ingredients
  

Vegetables

  • 3 cloves garlic (minced)
  • 5 cups sweet potatoes (cubed, 1-inch)
  • 1 piece green bell pepper (diced)
  • 1/2 large yellow onion (finely diced)
  • 2 tbsp avocado oil (or olive oil)

Main Components

  • 1 lb uncooked turkey sausage
  • 1/2 cup milk (whole) for richness
  • 10 large eggs
  • 1/2 cup grated mozzarella cheese

Seasoning

  • 1 tsp salt
  • 1 tsp dried thyme
  • 1/2 tsp pepper

Preparation

  • Preheat your oven to 350°F (175°C).
  • Chop the garlic, sweet potatoes, green bell pepper, and onion.
  • Grease a 9x13-inch casserole dish lightly.

Cooking

  • In a Dutch oven, heat the avocado oil over medium heat.
  • Add the onion and green pepper, cooking them for about 8-9 minutes until they soften.
  • Add minced garlic for the last couple of minutes.
  • Spread cooked vegetables evenly in the greased casserole dish.
  • In the same pan, cook the turkey sausage until fully cooked. Mix with the vegetables in the casserole dish.
  • In a large bowl, whisk together the eggs, milk, thyme, salt, pepper, and grated cheese.
  • Pour the egg mixture over the sausage and vegetable mixture. Stir gently to combine.
  • Bake in the preheated oven for about 40-45 minutes, or until the eggs are firm.
  • Let it cool for 15 minutes before serving.

Notes

Cut the casserole into squares for serving. Add toppings like salsa, avocado slices, or hot sauce for extra flavor. Pair with fresh fruit or a light salad.
