- 1.5 lbs boneless skinless chicken thighs cut into bite-sized pieces
- 1 cup pineapple juice
- 0.5 cup packed brown sugar
- 0.25 cup low-sodium soy sauce
- 2 tablespoons ketchup
- 2 tablespoons apple cider vinegar
- 3 cloves garlic minced
- 1 teaspoon ground ginger
- 1 tablespoon cornstarch mixed with 2 tbsp water
- 20 oz pineapple chunks drained
- 2 tablespoons vegetable oil
- Salt and black pepper to taste
Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat.
Season 1.5 lbs chicken thighs with salt and pepper. Sear 4-5 minutes per side until golden.
Add minced garlic and ground ginger; stir 30 seconds.
Pour in pineapple juice, brown sugar, soy sauce, ketchup, vinegar. Simmer 8-10 minutes with pineapple chunks.
Stir in cornstarch slurry. Cook 2 minutes until thickened. Garnish if desired.
