Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs cut into bite-sized pieces
  • 1 cup pineapple juice
  • 0.5 cup packed brown sugar
  • 0.25 cup low-sodium soy sauce
  • 2 tablespoons ketchup
  • 2 tablespoons apple cider vinegar
  • 3 cloves garlic minced
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch mixed with 2 tbsp water
  • 20 oz pineapple chunks drained
  • 2 tablespoons vegetable oil
  • Salt and black pepper to taste

Instructions
 

  • Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat.
  • Season 1.5 lbs chicken thighs with salt and pepper. Sear 4-5 minutes per side until golden.
  • Add minced garlic and ground ginger; stir 30 seconds.
  • Pour in pineapple juice, brown sugar, soy sauce, ketchup, vinegar. Simmer 8-10 minutes with pineapple chunks.
  • Stir in cornstarch slurry. Cook 2 minutes until thickened. Garnish if desired.
