Ingredients
  

Dry Ingredients

  • 2 cups rolled oats old-fashioned
  • 1 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt

Wet Ingredients

  • 2 cups milk dairy or non-dairy
  • 2 large eggs lightly beaten
  • 1/3 cup maple syrup or honey
  • 1 tsp vanilla extract

Mix-ins

  • 1 cup carrots finely grated
  • 1/2 cup crushed pineapple drained
  • 1/3 cup raisins
  • 1/4 cup chopped walnuts optional

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  • In a mixing bowl, combine rolled oats, baking powder, cinnamon, nutmeg, and salt.
  • In a separate bowl, whisk together milk, eggs, maple syrup, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and stir until combined.
  • Fold in grated carrots, crushed pineapple, raisins, and walnuts.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Bake for 35–40 minutes, until the top is golden and the oatmeal is set.
  • Allow to cool for 10 minutes before slicing and serving.

Notes

Serve warm with a drizzle of maple syrup or a dollop of Greek yogurt. Store leftovers in the fridge for up to 5 days or freeze for longer storage.
