Ingredients
  

  • 1 pound ground beef or substitute with ground turkey or plant-based alternative
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese plus extra for topping
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup chipotle sauce adjust to taste
  • 6 large flour tortillas
  • salt and black pepper to taste
  • 2 tablespoons olive oil for cooking
  • diced tomatoes, green onions, cilantro optional toppings

Instructions
 

  • Preheat oven to 425°F. Spread frozen tater tots on a baking sheet and bake for 20 to 25 minutes until golden and crispy.
  • While tots bake, heat olive oil in a large skillet over medium heat. Add ground beef, season with salt and pepper, and cook until browned, about 8 to 10 minutes. Drain excess grease.
  • Once tater tots are done, let cool briefly then lightly crush them with a fork or potato masher into smaller pieces.
  • In a large bowl, combine the crushed tater tots, cooked beef, cheddar cheese, and Monterey Jack cheese. Mix until well combined.
  • Warm tortillas in a dry skillet or microwave for 15 seconds each to prevent cracking.
  • Lay each tortilla flat and spoon filling down the center. Drizzle with chipotle sauce and add a dollop of sour cream.
  • Fold sides of tortilla inward, then roll from bottom up to form a tight burrito. Place seam-side down in a greased baking dish.
  • Sprinkle extra cheese over the top of all burritos. Bake at 375°F for 5 to 7 minutes until cheese melts and turns golden.
  • Let rest for 2 minutes, then garnish with optional toppings and serve immediately.
