Ingredients
  

  • 1 pound elbow macaroni pasta
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk warmed
  • 1 cup heavy cream
  • 8 slices American cheese cut into cubes
  • 1 1/2 cups sharp yellow cheddar cheese freshly shredded
  • 1 1/2 cups sharp white cheddar cheese freshly shredded
  • 1/2 cup Parmesan cheese freshly grated
  • 1/2 cup Romano cheese freshly grated
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon dry mustard powder
  • 1/4 teaspoon paprika

Instructions
 

  • Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook according to package directions until al dente. Drain and set aside without rinsing.
  • In a large saucepan or Dutch oven, melt the butter over medium heat. Once fully melted and starting to foam, whisk in the flour. Cook this roux for about 2 minutes, whisking constantly.
  • Slowly pour in the warm milk and heavy cream while whisking continuously. Keep whisking until the mixture is smooth and starts to thicken, about 4 to 5 minutes.
  • Remove the pan from heat and add the American cheese cubes first. Stir until melted, then gradually add the cheddar cheeses, Parmesan, and Romano.
  • Add the salt, pepper, dry mustard, and paprika. Stir until everything is melted and silky smooth.
  • Fold the cooked macaroni into the cheese sauce until every noodle is coated. Transfer to a greased 9x13 baking dish.
  • Sprinkle with additional shredded cheese if desired and broil for 2 to 3 minutes until bubbly and lightly browned. Serve immediately.

Notes

  • Freshly shredded cheese melts more smoothly than pre-shredded
  • Warm the milk before adding to prevent temperature shock
  • Remove from heat before adding cheese to avoid breaking the sauce
  • Store leftovers in the refrigerator for up to 4 days
