Ingredients
  

Cookie Ingredients

  • 1 cup melted butter
  • 1 cup light brown sugar (packed)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1.5 cups all-purpose flour
  • 1 cup Ghirardelli unsweetened cocoa powder
  • 1 teaspoon kosher salt
  • 1.5 teaspoons baking soda
  • 2 packages (11 ounces each) peanut butter chips

Instructions
 

Preparation

  • Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and set it aside.
  • In a large mixing bowl, combine melted butter with brown sugar. Mix until completely blended.
  • Add in the eggs and vanilla extract, mixing until everything is fully combined.
  • Add flour, cocoa powder, salt, and baking soda to the mixing bowl. Beat just until incorporated.
  • Fold in all but ½ cup of the peanut butter morsels. Chill the dough for 1 hour if desired.

Baking

  • Using a 2 Tbsp cookie scoop, drop the dough two inches apart on the prepared cookie sheet.
  • Press 5 or 6 of the reserved peanut butter chips on top of each cookie before baking.
  • Bake for 10-12 minutes. The cookies should be slightly underbaked but not runny.
  • Allow them to cool on the baking sheet for 5-10 minutes before moving them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze them for up to three months, separating layers with parchment paper. Use good quality chocolate and peanut butter chips for the best flavor. For a twist, add a sprinkle of sea salt on top before baking or substitute half the all-purpose flour with whole wheat flour.
