Ingredients
  

  • 1 cup cottage cheese
  • 1 medium apple finely diced
  • 2 eggs
  • 1/4 cup oat flour
  • 2 tbsp maple syrup or honey
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1 pinch salt

Instructions
 

  • Preheat oven to 180°C and grease a mini muffin tray.
  • Whisk eggs, cottage cheese, maple syrup, and vanilla until smooth.
  • Add oat flour, cinnamon, baking powder, and salt, then mix gently.
  • Fold in diced apple evenly.
  • Fill muffin tray and bake for 18 to 22 minutes until set.
  • Cool for 10 minutes before removing and serving.

Notes

  • Drain excess moisture from cottage cheese if needed.
  • Use firm apples for best texture.
