Ingredients
  

For the Bread Batter:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk

For the Apple Mixture:

  • 2 diced apples peeled and cored (Granny Smith or Honeycrisp).
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon

For the Cinnamon Sugar Swirl:

  • ¼ cup brown sugar
  • 1 teaspoon cinnamon

For the Glaze:

  • ½ cup powdered sugar
  • 1-2 tablespoons milk
  • ½ teaspoon vanilla extract

Optional Additions:

  • ¼ cup chopped pecans or walnuts for extra crunch
  • ½ teaspoon nutmeg for a spicier, deeper flavor
  • A drizzle of caramel sauce for extra indulgence

Instructions
 

Step 1: Preheat the Oven & Prepare the Baking Pan

  • Start by preheating your oven to 350°F (175°C).
  • While it’s heating, grease a 9x5-inch loaf pan with butter or cooking spray to ensure the bread doesn’t stick.
  • Optionally, line the pan with parchment paper for easy removal after baking.

Step 2: Prepare the Apple Filling

  • Peel, core, and dice the apples into small cubes for even distribution in the batter.
  • Transfer the diced apples to a bowl and mix with granulated sugar, brown sugar, and cinnamon until well coated.
  • Set aside to let the apples release their natural juices and absorb the cinnamon-sugar mixture.

Step 3: Make the Cinnamon Sugar Mix

  • In a small bowl, combine brown sugar and cinnamon and stir well.
  • Set aside, as this will be used for layering in the batter.

Step 4: Prepare the Batter

  • In a large mixing bowl, whisk together flour, baking powder, salt, and cinnamon until fully combined.
  • In a separate bowl, cream the softened butter and granulated sugar using a hand mixer until light and fluffy.
  • Add eggs one at a time, mixing well. Stir in vanilla.
  • Gradually add the dry ingredients, alternating with the milk, mixing until you have a smooth, lump-free batter.

Step 5: Layer the Batter & Apple Mixture

  • Pour half of the batter into the prepared loaf pan, using a spatula to spread it out evenly.
  • Sprinkle half of the apple mixture over the batter, ensuring an even distribution.
  • Dust with half of the cinnamon sugar mix for a sweet and spiced layer.
  • Pour the remaining batter on top, smoothing it out gently to cover the apples.
  • Finish by adding the remaining apples and sprinkling the rest of the cinnamon sugar mixture evenly across the top.

Step 6: Bake Until Golden & Fragrant

  • Place the loaf pan into the preheated oven on the middle rack.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • If the top begins to brown too quickly, loosely cover with aluminum foil for the last 15 minutes of baking.

Step 7: Cool & Prepare the Glaze

  • Once baked, remove the bread from the oven and allow it to cool in the pan for 10 minutes.
  • Carefully transfer the loaf to a wire rack and let it cool completely before glazing.
  • In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  • Drizzle the glaze evenly over the cooled bread, allowing it to set before slicing.

Step 8: Slice & Serve

  • Once the glaze has set, slice the bread into thick pieces using a serrated knife.
  • Serve warm or at room temperature with coffee, tea, or as a dessert with ice cream.
  • Store any leftovers in an airtight container at room temperature for up to three days, or refrigerate for longer freshness.
