Ingredients

  • 2-3 cups cooked chicken breast, torn into bite-sized pieces
  • 6 cups chicken broth
  • 2 cups flour
  • 1 tbsp baking powder
  • 1 1/4 tsp salt
  • 1 cup + 2 tbsp milk milk

Instructions

  • Heat the chicken broth in a large pot over medium heat until it begins to simmer.
  • In a large bowl, combine flour, baking powder, and salt. Mix well, then slowly add milk and stir until smooth.
  • Let the dough rest for 5–10 minutes.
  • On a floured surface, roll the dough to 1/2 inch thickness.
  • Cut the dough into 1/2 inch squares using a pizza cutter.
  • Drop the dumpling squares into the simmering broth and cook for about 25 minutes, stirring often to prevent sticking.
  • Add the cooked chicken to the pot and cook an additional 5 minutes, stirring gently.

Notes

Roll dumplings thinner for firmer texture or thicker for fluffy pillows. Add peas, carrots, or corn for extra heartiness. A splash of milk or butter creates a richer broth. Serve with simple sides like vegetables or salad.
