  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper freshly ground
  • 1/4 teaspoon paprika optional

Instructions
 

  • Preheat the oven to 350°F (175°C) and lightly grease a 12‑cup muffin tin or line it with silicone liners so the Cottage Cheese Egg Bites release easily.
  • In a large mixing bowl, whisk the eggs with the salt, black pepper, and garlic powder until the mixture looks smooth and slightly frothy.
  • Fold in the cottage cheese, shredded cheese, chopped vegetables, and paprika, stirring gently until everything is evenly combined without overmixing.
  • Divide the egg mixture evenly among the muffin cups, filling each about three‑quarters full to allow room for the egg bites to puff up while baking.
  • Bake the Cottage Cheese Egg Bites for 20–25 minutes, or until the tops are set, lightly golden, and a toothpick inserted in the center comes out mostly clean.
  • Let the egg bites cool in the pan for 5 minutes, then carefully loosen the edges with a small knife and transfer them to a rack; garnish with fresh chives or parsley before serving.
