Ingredients
  

  • 2 whole boneless skinless chicken breasts sliced into thin cutlets
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil for frying
  • 4 pieces sturdy sandwich rolls or ciabatta
  • 2 cups romaine lettuce chopped
  • 1/2 cup Caesar dressing
  • 1/3 cup parmesan freshly grated
  • 2 tablespoons butter softened

Instructions
 

  • Slice the chicken breasts into thin cutlets and set up three bowls: seasoned flour, beaten eggs, and panko breadcrumbs.
  • Coat each piece in flour, dip in eggs, then press into the panko until fully covered.
  • Heat the olive oil in a skillet and cook the chicken until golden, crisp, and fully cooked through.
  • Mix the romaine lettuce with a little Caesar dressing and parmesan just before assembling.
  • Butter and toast the bread, then layer on Caesar dressing, crispy chicken, and the dressed salad before serving.
