Cracker Dough
- 1 cup cottage cheese small curd, well-drained
- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 2 tbsp olive oil
- 1 tsp salt adjust to taste
- 1/2 tsp baking powder
- 1 tbsp sesame seeds optional, for topping
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine cottage cheese, olive oil, salt, and baking powder. Stir until smooth.
Add whole wheat flour and all-purpose flour gradually, mixing until a soft dough forms.
Lightly flour your work surface and roll the dough thin with a rolling pin. The thinner the dough, the crispier the crackers.
Cut the dough into small squares or desired shapes. Place them evenly on the prepared baking sheet.
Sprinkle sesame seeds on top for extra crunch, pressing them lightly into the dough.
Bake for 18–20 minutes, or until the crackers are golden and crisp. Allow to cool for 15 minutes before serving.
