Ingredients
  

Main Ingredients

  • 2 tbsp olive oil
  • 1 lb chicken breast (boneless/skinless, diced)
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 3 tsp poultry seasoning
  • 4 cups chicken broth
  • 1/4 cup heavy cream

Dumpling Ingredients

  • 1 cup flour (all purpose)
  • 1 tsp baking powder
  • 1 ea egg
  • 1/2 cup milk
  • 1 tsp salt
  • 1 tsp parsley

Instructions
 

Preparation

  • Heat 2 tablespoons of olive oil in a Dutch oven over medium heat.
  • Add the diced chicken and 1 teaspoon of poultry seasoning. Cook until the chicken is no longer pink, about 5-7 minutes.
  • Stir in the diced carrots and celery, cooking for another 2-3 minutes.
  • Add the remaining poultry seasoning and 4 cups of chicken broth. Stir well to combine.
  • Let the mixture simmer for about 25 minutes.
  • Stir in 1/4 cup of heavy cream.
  • In a separate bowl, combine flour, baking powder, egg, milk, salt, and parsley to form a soft dumpling dough.

Cooking

  • Drop the dumpling dough by spoonfuls into the simmering mixture, cooking uncovered for an additional 6-9 minutes.
  • When the dumplings are fluffy and cooked through, ladle the chicken and dumplings into bowls and serve.

Notes

Serve warm straight from the Dutch oven, ideally with crusty bread or a fresh salad. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
