Ingredients

Main Ingredients

  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 can (10 oz) red enchilada sauce Feel free to use store-bought for convenience.
  • 8 pieces corn tortillas Traditional choice, but flour tortillas can be used.
  • 2 cups shredded cheese Cheddar or Mexican blend can be used.
  • 1 cup diced onions Add to beef mixture.
  • 1 cup chopped bell peppers Add to beef mixture.
  • Salt and pepper To taste.
  • Fresh toppings (e.g., sour cream, cilantro, avocado) For serving.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the ground beef over medium heat until browned, adding salt and pepper to taste.
  • Stir in the diced onions and bell peppers, cooking until softened.
  • Pour half of the enchilada sauce into the beef mixture and stir to combine.
  • In each tortilla, place some of the beef mixture and sprinkle with cheese. Roll up the tortillas and place them seam-side down in a baking dish.
  • Pour the remaining enchilada sauce over the rolled tortillas and top with the remaining cheese.
  • Bake in the preheated oven for about 20-25 minutes, until the cheese is melted and bubbly.

Serving

  • Serve Easy Ground Beef Enchiladas warm, topped with your favorite fresh toppings like sour cream, chopped cilantro, or sliced avocado.

Storage

  • To store leftovers, let the enchiladas cool completely. Place them in an airtight container and keep them in the refrigerator for up to three days.
  • You can also freeze them for longer storage; just make sure to use a freezer-safe container.
  • When you’re ready to eat them, thaw in the fridge and reheat in the oven or microwave.

Notes

You can easily swap the ground beef for ground turkey or chicken if you prefer a lighter meat option. Vegetarians can replace the meat with beans or lentils for a tasty plant-based version. Add black beans or corn for extra texture, or diced jalapeños or chili powder for spice.
