- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter melted
- 10.5 oz full-fat cream cheese room temperature
- 1/2 cup granulated sugar
- 2 large eggs room temperature
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice
- 1 1/2 tablespoons all-purpose flour
- 3/4 cup full-fat sour cream room temperature
Preheat oven to 320°F (160°C). Line muffin tin with paper liners.
Mix graham cracker crumbs and melted butter. Press into liners.
Beat cream cheese until smooth. Add sugar.
Add eggs one at a time, mixing just until combined.
Mix in vanilla, lemon juice, flour, then sour cream.
Fill liners. Bake 15-18 mins until edges set, centers jiggle.
Cool in pan, then chill 4+ hours.
