Ingredients
  

  • 4 cups elbow macaroni
  • 1 cup mayonnaise
  • 1/4 cup white vinegar
  • 2 tablespoons yellow mustard
  • 2 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 cup celery finely chopped
  • 1/2 cup red onion finely chopped
  • 1 cup green bell pepper diced small
  • 1/2 cup grated carrot
  • 2 hard-boiled eggs chopped

Instructions
 

  • Cook the elbow macaroni in salted water until just tender, then drain and rinse under cold water.
  • Whisk together the mayonnaise, vinegar, mustard, sugar, salt, and black pepper in a large bowl.
  • Add the celery, red onion, green bell pepper, carrot, and hard-boiled eggs.
  • Fold in the cooled macaroni until everything is evenly coated.
  • Chill for at least 1 hour before serving, then stir and adjust seasoning if needed.

Notes
