Equipment

  • 8- or 9-inch shallow baking dish
  • Large mixing bowl
  • Whisk
  • Fine mesh strainer

Ingredients

  • 1 tablespoon unsalted butter for greasing
  • 2 cups fresh strawberries hulled and halved
  • 1 1/4 cups whole or 2% milk
  • 2/3 cup granulated sugar
  • 3 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon fine salt
  • powdered sugar for serving

Instructions

  • Preheat the oven to 350°F (180°C) and butter an 8- or 9-inch shallow baking dish.
  • Arrange the strawberries evenly over the bottom of the prepared dish.
  • Whisk the milk, sugar, eggs, and vanilla in a large bowl until smooth.
  • Gradually whisk in the flour and salt. Strain the batter if it contains lumps.
  • Pour the batter over the strawberries and bake for 50 to 60 minutes, until the edges are golden and the center gently wobbles.
  • Cool for at least 15 minutes, dust with powdered sugar, and serve warm or chilled.

Notes

  • Dry fresh strawberries thoroughly before using.
  • A slight wobble in the center is normal because the custard continues setting as it cools.
  • Store covered in the refrigerator for up to three days.
