Fried Egg Quesadilla

Ingredients
  

For the Quesadilla

  • 2 pieces Flour tortillas
  • 2 pieces Large eggs Freshly cracked
  • 1 cup Shredded cheese (Cheddar or mozzarella) Use your preferred type of cheese
  • 1 piece Avocado (Sliced) For topping
  • 1 tbsp Butter (For frying the tortillas) Can substitute with olive oil for a healthier choice

Seasoning

  • to taste Salt
  • to taste Pepper

Preparation

  • Start by heating a non-stick skillet over medium heat. Add a small amount of butter to the skillet.
  • Crack one egg into the skillet. Season it with salt and pepper. Cook until the egg white is set, but the yolk is still runny. Remove the fried egg and set it aside. Repeat with the second egg.

Assembling the Quesadilla

  • In the same skillet, place one tortilla and sprinkle half of the shredded cheese over it.
  • Place the fried eggs on top of the cheese, followed by the slices of avocado. Sprinkle the remaining cheese over the avocado.
  • Carefully place the second tortilla on top.

Cooking

  • Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
  • Remove the quesadilla from the skillet, cut it into wedges, and serve hot.

Notes

Serve with salsa or sour cream for dipping, and consider adding fresh cilantro or lime wedges for extra flavor. Store leftovers in an airtight container in the fridge for up to 2 days.
