- 1 14-ounce bag coleslaw mix
- 1 cup frozen corn, thawed
- 1 15-ounce can black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cup crushed Fritos
- 1/2 cup mayonnaise
- 1/4 cup ranch dressing
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1/2 cup shredded cheddar cheese
In a large bowl, combine coleslaw mix, corn, black beans, and cherry tomatoes. Toss gently.
Whisk together mayonnaise, ranch dressing, apple cider vinegar, sugar, chili powder, and cumin in a small bowl. Season with salt and pepper.
Pour dressing over vegetables and mix until coated.
Just before serving, fold in crushed Fritos and cilantro. Top with cheddar cheese.
- Add Fritos right before serving for maximum crunch.
- Chill dressing ahead for better flavor.
