Ingredients
  

  • 1 14-ounce bag coleslaw mix
  • 1 cup frozen corn, thawed
  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup crushed Fritos
  • 1/2 cup mayonnaise
  • 1/4 cup ranch dressing
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded cheddar cheese

Instructions
 

  • In a large bowl, combine coleslaw mix, corn, black beans, and cherry tomatoes. Toss gently.
  • Whisk together mayonnaise, ranch dressing, apple cider vinegar, sugar, chili powder, and cumin in a small bowl. Season with salt and pepper.
  • Pour dressing over vegetables and mix until coated.
  • Just before serving, fold in crushed Fritos and cilantro. Top with cheddar cheese.

Notes

  • Add Fritos right before serving for maximum crunch.
  • Chill dressing ahead for better flavor.
  • Serves 6-8 as a side.
