- 1.5 pounds beef stew meat cut into bite-sized pieces
- 1 pound baby potatoes halved
- 4 tablespoons unsalted butter melted
- 3 cloves garlic minced
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 0.5 teaspoon dried thyme
- 0.5 teaspoon dried rosemary
- 0.5 teaspoon salt or to taste
- 0.25 teaspoon black pepper
- 0.25 cup beef broth
- 1 tablespoon olive oil for searing
Heat olive oil in skillet over medium-high. Sear beef stew meat until browned, 2-3 minutes per side.
Add halved baby potatoes to slow cooker, top with seared beef.
Mix melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour over ingredients.
Add beef broth. Cover and cook on low 6-8 hours or high 3-4 hours until tender.
Stir gently before serving.
