- 1.5 pounds sirloin steak cut into 1-inch bite-sized pieces
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon smoked paprika
- 0.5 teaspoon garlic powder
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter divided
- 5 cloves garlic minced
- 1 cup heavy cream
- 0.75 cup grated Parmesan cheese
- 0.25 cup beef broth
- 2 tablespoons fresh parsley chopped
- 0.25 teaspoon red pepper flakes optional
Season the steak bites with salt, pepper, smoked paprika, and garlic powder. Let sit 5 minutes.
Heat olive oil and 2 tbsp butter in skillet over medium-high. Sear steak bites 3 minutes per side in batches. Remove and set aside.
In same skillet, melt remaining butter, add minced garlic. Sauté 1 minute until fragrant.
Add beef broth, scrape bits. Stir in heavy cream, simmer 2 minutes.
Off heat, whisk in Parmesan until smooth. Return steak bites, coat well. Garnish with parsley and red pepper flakes.
