Ingredients
  

  • 6 tablespoons unsalted butter
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar for the batter
  • 1/4 cup unsweetened cocoa powder for the batter
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar for the topping
  • 1/2 cup light brown sugar packed
  • 1/4 cup unsweetened cocoa powder for the topping
  • 1 1/2 cups boiling water
  • vanilla ice cream for serving

Instructions
 

  • Preheat the oven to 350°F. Place the butter in an 8-inch square baking dish and melt it in the oven.
  • Whisk together the flour, baking powder, salt, sugar, and cocoa powder. Stir in the milk and vanilla until a thick batter forms.
  • Spoon the batter over the melted butter without stirring the layers together.
  • Mix the remaining sugar, brown sugar, and cocoa powder. Sprinkle evenly over the batter.
  • Slowly pour the boiling water over the topping. Do not stir.
  • Bake for 30 to 35 minutes, until the top is set and the center gently wobbles.
  • Rest for 15 minutes, then serve warm with vanilla ice cream.

Notes

  • Do not stir after adding the hot water.
  • Rest the cobbler before serving so the sauce can thicken.
  • Store covered in the refrigerator for up to three days.
