Ingredients
  

  • 4 boneless skinless chicken breasts, pounded to 1/2-inch thickness
  • 2 large lemons, juice and zest
  • 1/4 cup extra virgin olive oil
  • 4 garlic cloves, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 cup crumbled feta cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish
  • 1/4 cup Greek yogurt (optional)

Instructions
 

  • Preheat oven to 375°F (190°C). Whisk lemon juice, zest, olive oil, garlic, oregano, paprika, salt, and pepper in a bowl.
  • Place chicken breasts in a baking dish, pour marinade over, and rub in. Let sit 20-30 minutes.
  • Sprinkle feta cheese on top. Bake 25-30 minutes until chicken reaches 165°F.
  • Rest 5 minutes, garnish with parsley, and serve.

Notes

  • Pound chicken evenly for best results.
  • Marinate longer for deeper flavor.
  • Broil last 2 minutes for crispy feta.
