- 1.5 pounds boneless skinless chicken breasts pounded to even thickness
- 1 cup plain full-fat Greek yogurt
- 1/4 cup fresh lemon juice about 2 lemons
- 4 garlic cloves minced
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon zest of
- 2 tablespoons fresh parsley chopped, for garnish
In a large bowl, whisk together Greek yogurt, lemon juice, lemon zest, minced garlic, olive oil, oregano, paprika, cumin, salt, and pepper.
Pound chicken breasts to even thickness. Add to the marinade, coat well, cover, and refrigerate for 2-24 hours.
Preheat grill to medium-high. Scrape excess marinade from chicken, oil grates, and grill 5-6 minutes per side until 165°F internal temp.
Rest 5 minutes, slice, garnish with parsley, and serve.
