Ingredients
  

  • 2 cups all-purpose flour (or Bisquick)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup buttermilk
  • 1 large egg
  • 1/2 cup currants or raisins plumped in hot water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon caraway seeds optional
  • Coarse sugar for sprinkling

Instructions
 

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment.
  • Whisk flour, baking soda, baking powder, salt, and sugar in a bowl.
  • Cut in cold butter until crumbly.
  • Mix buttermilk, egg, and vanilla; stir into dry ingredients until just combined.
  • Fold in currants and optional caraway.
  • Drop by tablespoonfuls onto sheets; sprinkle with coarse sugar.
  • Bake 12-15 minutes until golden. Cool on racks.
