Ingredients
  

  • 2.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup butter softened
  • 1 cup sugar
  • 1 egg
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 0.5 cup strawberry jam

Instructions
 

  • Preheat oven to 180°C and line a baking tray.
  • Mix butter and sugar until creamy.
  • Add egg, lemon juice, zest, and vanilla.
  • Stir in dry ingredients until dough forms.
  • Scoop and bake for 10–12 minutes.
  • Cool and fill with strawberry filling, then sandwich.

Notes

  • Chill dough if sticky
  • Do not overbake
  • Use fresh lemon zest
