Ingredients
  

  • 1/2 cup unsalted butter melted
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 21 oz lemon pie filling
  • 1 tsp baking powder

Instructions
 

  • Preheat oven to 180°C and pour melted butter into a baking dish.
  • Mix flour, sugar, baking powder, and salt in a bowl.
  • Add buttermilk, vanilla, and lemon zest and whisk until smooth.
  • Pour batter over butter without stirring, then add lemon pie filling on top.
  • Bake for 40-45 minutes until golden and set.

Notes

  • Do not stir layers after pouring.
  • Let rest before serving.
  • Best served warm with ice cream.
