Ingredients
  

  • 2 cups shredded green cabbage
  • 1 large ripe mango, peeled and diced
  • 1/2 red bell pepper, thinly sliced
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 small jalapeño, seeded and minced (optional)
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Shred cabbage finely and dice mango into small pieces.
  • Slice bell pepper, onion, cilantro, and jalapeño thinly.
  • Whisk lime juice, olive oil, honey, salt, and pepper for dressing.
  • Toss veggies and mango in a bowl, then add dressing and mix gently.
  • Let sit 10 minutes before serving for best flavor.

  • Chill for 30 minutes for extra crispness.
  • Store up to 2 days in fridge.
