- 2 cups shredded green cabbage
- 1 large ripe mango, peeled and diced
- 1/2 red bell pepper, thinly sliced
- 1/4 cup thinly sliced red onion
- 1/4 cup chopped fresh cilantro
- 1 small jalapeño, seeded and minced (optional)
- 3 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Shred cabbage finely and dice mango into small pieces.
Slice bell pepper, onion, cilantro, and jalapeño thinly.
Whisk lime juice, olive oil, honey, salt, and pepper for dressing.
Toss veggies and mango in a bowl, then add dressing and mix gently.
Let sit 10 minutes before serving for best flavor.
