Ingredients
  

  • 12 oz vanilla wafers finely crushed
  • 2 cups almond flour
  • 4 oz white chocolate melted
  • 1/4 cup tequila
  • 1/4 cup orange marmalade
  • 2 tbsp light corn syrup
  • 1 lime juice about 2 tbsp
  • 1 cup granulated sugar for rolling
  • 2 limes zest divided

Instructions
 

  • Combine crushed vanilla wafers and almond flour in a bowl.
  • Melt white chocolate and add with tequila, marmalade, corn syrup, lime juice, and half the zest. Knead into dough.
  • Roll into 1-inch balls. Coat in sugar mixed with remaining zest. Chill 30 minutes.
