Ingredients
  

  • 6 cups seedless watermelon rind removed and cut into 1-inch cubes
  • 2 tablespoons fresh lime juice
  • 1/2 cup fresh basil leaves thinly sliced
  • 1/2 teaspoon fine salt or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 4 ounces feta cheese crumbled or broken into small pieces
  • 1 tablespoon extra-virgin olive oil optional

Instructions
 

  • Combine the watermelon, lime juice, salt, and pepper in a large bowl.
  • Add the basil and toss gently so the fruit stays intact.
  • Top with feta cheese and drizzle with olive oil if using.
  • Serve immediately while the salad is cold and fresh.

Notes
