- 1 1/4 pounds boneless skinless chicken breasts cut into 1-inch chunks
- 3 medium zucchinis sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 1 lemon juice of
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley chopped for garnish
Preheat oven to 400°F (200°C).
In large bowl, toss chicken chunks and zucchini slices with olive oil, garlic, lemon juice, oregano, basil, salt, and pepper.
Spread mixture evenly in 9x13-inch baking dish.
Sprinkle mozzarella and Parmesan over top.
Bake uncovered 25-30 minutes until chicken reaches 165°F and cheese is golden.
Garnish with parsley and serve.
