Ingredients
  

  • 36 pieces frozen tater tots slightly thawed
  • 10 large eggs room temperature
  • 1/4 cup whole milk or half-and-half
  • 1 1/2 cups shredded cheddar cheese divided
  • 1/2 cup diced bell peppers any color
  • 1/3 cup finely chopped onion
  • 6 links breakfast sausage cooked and crumbled, optional
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • salt and black pepper to taste
  • cooking spray for greasing
  • fresh chives or parsley for garnish

Instructions
 

  • Preheat oven to 400°F. Generously grease a standard 12-cup muffin tin with cooking spray.
  • Place 3 tater tots in each muffin cup. Microwave for 2-3 minutes until slightly softened.
  • Use bottom of small glass to press tots into base and up sides of cups, forming nests. Bake for 10 minutes until golden.
  • Remove from oven and reduce temperature to 350°F.
  • In large bowl, whisk together eggs, milk, garlic powder, paprika, salt, and pepper until well combined.
  • Stir in 3/4 cup cheese, bell peppers, onion, and sausage (if using).
  • Divide egg mixture evenly among tater tot cups, filling each about 3/4 full.
  • Top with remaining 3/4 cup cheese.
  • Bake for 18-22 minutes until eggs are set and tops are lightly golden.
  • Cool for 5 minutes before carefully removing with small spatula. Garnish with fresh herbs and serve.

Notes

  • Thaw tater tots slightly for easier shaping
  • Don't overfill cups as eggs will expand during baking
  • Room temperature eggs create smoother texture
  • Store refrigerated up to 4 days or freeze up to 2 months
  • Reheat in 350°F oven for best texture retention
