For the Muffins
- 1 3/4 cups all-purpose flour sifted
- 1/2 cup granulated sugar
- 1/4 cup brown sugar packed
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup buttermilk room temperature
- 1/3 cup unsalted butter melted and cooled
- 2 large eggs room temperature
- 2 tsp vanilla extract
For the Cinnamon Streusel
- 1/3 cup brown sugar packed
- 2 tbsp all-purpose flour
- 1 tsp ground cinnamon
- 2 tbsp unsalted butter melted
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease lightly with butter.
In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together buttermilk, melted butter, eggs, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and mix gently until just combined. Do not overmix; the batter should be slightly lumpy.
In a small bowl, combine the brown sugar, flour, cinnamon, and melted butter to form the streusel topping.
