Main Ingredients

  • 1 box 13 oz gingersnap cookies
  • 1 package 8 oz cream cheese Must be softened for easy mixing.
  • 1 package 16 oz vanilla almond bark For coating the truffles.
  • to taste Nutmeg Optional garnish.

Instructions
 

Preparation

  • Crush the gingersnap cookies in a food processor until fine crumbs are formed.
  • Transfer cookie crumbs to a medium bowl and mix in softened cream cheese until well-blended.
  • Roll small portions of the mixture into 1-inch balls, yielding about 36 truffles.
  • Place the rolled balls on a cookie sheet lined with baking mat or wax paper and chill in the fridge for 45 minutes.
  • While the truffles chill, melt the vanilla almond bark according to package directions.

Coating

  • Dip each chilled truffle into the melted almond bark and place them back on the lined cookie sheet.
  • If desired, sprinkle a little nutmeg on top of each truffle for added flavor.
  • Repeat the dipping process for any remaining cookie balls and chill again for 30 minutes to set.

Serving and Storage

  • Serve the truffles on a festive platter or enjoy as a sweet snack.
  • Store leftover truffles in a covered container in the fridge for up to two weeks.

Notes

For best results, ensure cream cheese is softened. Different coatings such as dark or milk chocolate can also be used. You can experiment with flavor additions by mixing in spices like cinnamon or ginger.
