Ingredients
  

Cookie Base

  • 1 large egg
  • 1/2 cup unsalted butter, softened to room temp
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 1/2 cups old-fashioned whole rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 to 1 teaspoon cinnamon, added to taste
  • 1/2 teaspoon baking soda
  • 1 pinch salt, optional and to taste

Add-ins

  • 1 heaping cup semi-sweet chocolate chips
  • 1/2 cup raisins or nuts, optional and to taste

Instructions
 

Preparation

  • In a stand mixer, combine the egg, butter, sugars, and vanilla. Beat until well combined.
  • Add oats, flour, cinnamon, baking soda, and optional salt. Mix until just combined.
  • Stir in chocolate chips and optional raisins or nuts.
  • Form mounds of dough, place them on a plate, and refrigerate for at least 2 hours.

Baking

  • Preheat the oven to 350°F and line a baking sheet.
  • Place dough mounds on the baking sheet and bake for about 11 minutes until the edges are set.
  • Allow the cookies to cool on the baking sheet for 10 minutes before serving.

Notes

These cookies are best enjoyed warm. You can serve them as they are or pair them with a glass of milk or a cup of coffee. Store in an airtight container at room temperature or freeze them with parchment paper to prevent sticking.
