- 1 pound Italian-style meatballs homemade or frozen
- 2 tablespoons olive oil
- 1 medium onion finely diced
- 3 carrots peeled and diced small
- 3 celery stalks diced small
- 4 cloves garlic minced
- 6 cups chicken broth low-sodium preferred
- 1 can (14.5 oz) diced tomatoes undrained
- 4 cups fresh spinach roughly chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon black pepper

Preheat oven to 375°F and cook pasta according to package directions until al dente, about 2 minutes less than recommended.
Heat olive oil in large pot over medium heat. Add onion, carrots, and celery, cooking 5-7 minutes until softened.
Add minced garlic and cook 1 minute until fragrant. Pour in chicken broth and diced tomatoes, bring to gentle simmer.
Stir in cooked pasta, meatballs, and Italian seasoning. Transfer mixture to 9x13 inch baking dish.
