- 2 cups graham cracker crumbs about 14 whole crackers
- 1/2 cup unsalted butter melted
- 16 ounces cream cheese softened to room temperature
- 1 cup powdered sugar sifted
- 2 teaspoons pure vanilla extract
- 1 cup heavy whipping cream cold
- 2 cups fresh strawberries hulled and diced
- 3 ripe kiwis peeled and diced
- 2 tablespoons granulated sugar
- 1 tablespoon fresh lemon juice
- 2 1/2 teaspoons unflavored gelatin powder
- 3 tablespoons cold water
Sprinkle gelatin over cold water in small bowl. Let bloom 5 minutes until spongy. Microwave 15-20 seconds until completely dissolved. Set aside to cool slightly.
Combine graham cracker crumbs with melted butter in medium bowl. Mix until resembles wet sand. Divide evenly among 8-10 parfait cups, pressing firmly to compact.
Beat cream cheese, powdered sugar, and vanilla until completely smooth and fluffy, about 3-4 minutes. Scrape down sides frequently.
In separate bowl, whip heavy cream until stiff peaks form. Gently fold into cream cheese mixture in three additions.
Stream in dissolved gelatin while folding to ensure even distribution throughout the filling.
Toss diced strawberries and kiwi with granulated sugar and lemon juice. Let macerate 10 minutes. Reserve half for garnish.
Fold remaining fruit into cheesecake mixture. Spoon or pipe filling over crumb base in each cup, filling three-quarters full.
