Ingredients
  

  • 1 package (8 oz) cream cheese softened at room temperature
  • 1/2 cup powdered sugar sifted
  • 1 teaspoon vanilla extract pure
  • 1/2 teaspoon mint extract adjust to preference
  • 1 package (3.4 oz) instant pistachio pudding mix
  • 2 cups cold whole milk
  • 1 container (8 oz) whipped topping such as Cool Whip, thawed
  • 1 cup mini marshmallows
  • green sprinkles for garnish, optional

Instructions
 

  • In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract with an electric mixer until completely smooth and creamy, about 2 minutes.
  • In a separate medium bowl, whisk together the instant pistachio pudding mix and cold milk for about 2 minutes until the mixture thickens.
  • Pour the pudding mixture into the cream cheese bowl. Beat on medium speed until everything is fully combined and smooth.
  • Add the mint extract and mix briefly to incorporate.
  • Using a rubber spatula, gently fold in the whipped topping with big sweeping motions until the mixture is light, fluffy, and well incorporated. Do not overmix.
  • Gently fold in the mini marshmallows until evenly distributed throughout the fluff.
  • Transfer to a serving dish or individual dessert cups. Top with green sprinkles if desired.
  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld and the texture to firm up.

Notes

  • Let cream cheese soften on the counter for 30-45 minutes before starting for the smoothest results.
  • Work quickly once the pudding is whisked, as it thickens fast.
  • Use full-fat whipped topping for best texture and longer hold.
  • Can be made up to 24 hours ahead and stored covered in the refrigerator.
  • For a deeper green color, add 1-2 drops of green food coloring.
  • Not recommended for freezing as the whipped topping becomes icy.
