- 1 pound ground beef 80/20 blend works best
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 2 cups shredded lettuce or mixed greens
- 1 cup diced tomatoes
- 1/2 cup sliced pickles
- 1/4 cup diced white onion
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- 4 burger buns or cooked rice optional base
Heat your cast iron skillet over medium-high heat until screaming hot. Add olive oil and let it shimmer.
Divide ground beef into 4 equal portions. Drop each into the hot skillet and immediately smash down hard with a spatula until paper-thin, about 1/4 inch thick.
Season generously with kosher salt, black pepper, garlic powder, onion powder, and smoked paprika.
Cook undisturbed for 2-3 minutes until deep golden brown crusts form. Flip and cook another 1-2 minutes.
Top with shredded cheddar cheese during the last minute and cover to melt.
Build your bowls by starting with shredded lettuce or your chosen base. Arrange the smashed patties on top.
Pile high with diced tomatoes, sliced pickles, and diced white onion. Drizzle generously with special sauce and serve immediately.
- Use 80/20 ground beef for best crust and flavor
- Make sure skillet is screaming hot before adding beef
- Don't press patties after initial smash to keep juices locked in
- Work in batches to avoid crowding the pan
