- 1 lb ground chicken
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 small flour tortillas (6-inch)
- 1/3 cup Caesar dressing plus more for drizzling
- 1 cup romaine lettuce shredded
- 1/4 cup parmesan cheese freshly grated
- 1 tbsp olive oil
- lemon wedges optional, for serving
Mix ground chicken with garlic powder, onion powder, smoked paprika, salt, and black pepper in a bowl until just combined.
Divide the seasoned chicken into 4 equal portions.
Heat olive oil in a cast iron skillet over medium-high heat until shimmering.
Place one portion of chicken onto the hot skillet and immediately press flat with a spatula until about 1/4 inch thick.
Cook undisturbed for 3 to 4 minutes until the edges are golden and crispy, then flip and cook another 2 to 3 minutes.
Place a tortilla on top of the hot cooked chicken, press gently, then flip so the tortilla toasts for about 30 seconds. Remove from pan.
Repeat with remaining chicken portions.
Assemble each taco by spreading Caesar dressing on the chicken side, then top with shredded romaine, parmesan, and an extra drizzle of dressing. Serve immediately.
- Press the chicken as thin and even as possible for the crispiest edges.
- Do not season chicken too far in advance - salt draws out moisture before cooking.
