Instructions

Preparation

  • Set a large, heavy-bottomed saucepan over medium heat and heat 1 quart of whole milk to 195°F, stirring almost continuously to prevent burning.
  • While the milk heats, whisk together ¾ cup of flour, ¼ cup of sugar, and ⅛ teaspoon of salt in a small bowl and set aside.
  • In another small saucepan, gently melt ½ cup of salted butter over medium heat and turn off the heat once melted.

Cooking

  • Once the milk reaches 195°F, stir the flour mixture into the melted butter to create a thick paste.
  • Add this paste to the heated milk, stirring constantly until the mixture starts to boil.
  • Reduce the heat to low and let the mixture cook for an additional 5 minutes, stirring often until smooth and thick.

Serving

  • Remove the saucepan from heat, spoon the warm porridge into individual bowls, drizzle melted butter over the top, and sprinkle generously with cinnamon-sugar.
