Spatula
- 2 tablespoons unsalted butter, softened room temperature
- 2 tablespoons Parmesan cheese, finely grated
- 4 slices sourdough bread 1/2 inch thick
- 2 mozzarella cheese deli-sliced preferred
- 2 slices white cheddar cheese deli-sliced preferred
In a small bowl, mix together 2 tablespoons softened butter and 2 tablespoons grated Parmesan until well combined and smooth.
Spread the Parmesan-butter mixture generously on one side of each of the 4 sourdough bread slices.
On the unbuttered side of 2 bread slices, layer 2 slices mozzarella and 2 slices white cheddar, tearing cheese to fit if needed.
Top with remaining bread slices, buttered side facing out, to form 2 sandwiches.
Heat a large skillet over medium-low heat. Add sandwiches and cook 1-2 minutes per side until golden brown and cheese melts completely.
If cheese needs help melting, cover skillet with lid or cookie sheet for 1 minute to trap heat.
Remove from skillet, cut diagonally, and serve immediately while hot and melty.
- Use deli-sliced cheese for best melt and authentic texture
- Keep heat at medium-low to prevent burning before cheese melts
- Covering the skillet briefly helps cheese melt faster without over-browning bread
- Freshly grated Parmigiano-Reggiano elevates the flavor significantly
