Mixing bowls
- 500 g fresh strawberries, hulled and divided
- 400 ml cold heavy whipping cream
- 250 g mascarpone cheese, cold
- 60 g powdered sugar plus extra for strawberries
- 2 teaspoons vanilla extract
- 1 tablespoon lemon juice
- 100 g white chocolate, chilled for grating
- 12 pieces digestive biscuits or graham crackers optional
- 6 leaves fresh mint for garnish
Chop 400g strawberries into small pieces. Toss with 2 tablespoons powdered sugar and lemon juice. Set aside for 15 minutes to macerate.
Place remaining 100g strawberries in Thermomix bowl with mascarpone, 60g powdered sugar, and vanilla. Mix 20 seconds on speed 6 until smooth.
Insert butterfly whisk attachment. Add cold heavy cream and whip 3-4 minutes on speed 3 until stiff peaks form.
Transfer cream to piping bag with star tip. If using biscuits, crush and layer in bottom of 6 serving glasses.
Pipe or spoon cream over biscuits in circular motions to create spaghetti-like strands.
Top with macerated strawberries and juices. Grate chilled white chocolate over each cup using fine grater.
Garnish with mint and serve immediately, or chill up to 2 hours before serving.
- Chill all ingredients and equipment beforehand for best whipping results
- Don't overwhip cream or it will become grainy
- For dairy-free version, use coconut cream and coconut-based cream cheese
- White chocolate shavings create the signature Spaghettieis cheese-like appearance
- Assemble close to serving time for best texture
