  • 2 cups shredded chicken Use cooked, shredded chicken.
  • ½ cup sun dried tomatoes in oil, drained and chopped
  • 2 stalks celery, diced
  • ¼ cup red onion, finely diced

Dressing Ingredients

  • cup plain Greek yogurt
  • cup mayonnaise
  • ¼ cup fresh basil, chopped
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp black pepper

Preparation

  • Gather all your ingredients. In a large bowl, add the shredded chicken, chopped sun dried tomatoes, diced celery, and finely diced red onion. Mix them gently and set the bowl aside.
  • In a small bowl, combine the Greek yogurt, mayonnaise, chopped basil, minced garlic, lemon juice, salt, and black pepper. Stir everything together until well mixed and creamy.
  • Pour the creamy dressing over the chicken and veggie mixture. Use a spoon or spatula to toss everything together until the salad is mixed thoroughly. Ensure all ingredients are coated with the dressing.
