Ingredients
  

  • 2 pounds sweet potatoes cut into ½-inch cubes
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon onion powder for sweet potatoes
  • ½ teaspoon garlic powder for sweet potatoes
  • ½ teaspoon paprika for sweet potatoes
  • 1 pound lean ground beef 90/10 or 85/15
  • ½ teaspoon onion powder for beef

  • ½ teaspoon paprika for beef
  • ¼ cup mayonnaise
  • tablespoons ketchup
  • 1 tablespoon sweet pickle relish finely chopped
  • ½ tablespoon white vinegar
  • 3 cups shredded iceberg lettuce
  • 4 medium Roma tomatoes deseeded and diced
  • 1 cup shredded cheddar cheese
  • ½ cup diced white onion
  • ½ cup diced dill pickles

Instructions
 

  • Preheat oven to 425°F (200°C). In a large mixing bowl, toss 2 pounds cubed sweet potatoes with 2 tablespoons olive oil, ½ teaspoon onion powder, ½ teaspoon garlic powder, ½ teaspoon paprika, salt, and pepper until evenly coated.
  • Spread seasoned sweet potatoes in a single layer on a baking sheet with space between cubes. Roast for 30-35 minutes, stirring halfway through, until edges are golden and slightly crisp.
  • While potatoes roast, heat a large skillet over medium heat. Add 1 pound ground beef and break up with spatula. Once browning, add ½ teaspoon onion powder, ½ teaspoon garlic powder, ½ teaspoon paprika, salt, and pepper. Cook for 8-10 minutes until fully browned. Drain excess fat if needed.
  • In a small bowl, whisk together ¼ cup mayonnaise, 1½ tablespoons ketchup, 1 tablespoon pickle relish, ½ tablespoon white vinegar, and a pinch of salt until smooth. Refrigerate while potatoes finish roasting.
  • To assemble, add a generous portion of roasted sweet potatoes to each bowl. Top with seasoned ground beef, shredded cheese, shredded lettuce, diced tomatoes, diced pickles, and diced onion. Drizzle with burger sauce and serve immediately.
