- 8 ounces fresh mushrooms, sliced thick button, cremini, or mix
- 4 tablespoons butter divided
- 1 small yellow onion thinly sliced
- 2 cloves garlic minced
- 8 slices good quality bread sourdough, rye, or country white
- 8 slices Swiss cheese
- 1 teaspoon fresh thyme leaves chopped
- Salt and freshly ground black pepper to taste
- 1 tablespoon olive oil
- Dijon mustard optional, for spreading
Heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until soft and golden, about 10-12 minutes.
Push onions to one side of pan. Add remaining butter to the empty side. Once melted, add mushrooms in a single layer. Cook without stirring for 3 minutes, then stir and continue cooking until mushrooms release moisture and turn deep golden brown, 6-8 minutes more.
Add garlic and thyme in the last minute of cooking. Season with salt and pepper. Remove from heat.
Spread Dijon mustard (if using) on one side of each bread slice. Place 1 slice of Swiss cheese on 4 bread pieces. Divide mushroom mixture evenly among them. Top with remaining cheese slices. Close with remaining bread, buttered side out.
Heat a clean skillet or griddle over medium-low heat. Cook sandwiches for 3-4 minutes per side, pressing gently with spatula, until bread is golden brown and cheese is completely melted.
Let sandwiches rest for 1 minute before cutting in half. Serve immediately while cheese is still gooey.
- Don't overcrowd mushrooms in the pan - they need space to brown properly, not steam
- Use room temperature butter for easier spreading on bread
- If cheese is melting before bread browns, lower your heat
