Ingredients

For the Torta:

  • 1 bolillo or telera roll or substitute with a soft baguette or ciabatta
  • 1 cup cooked turkey sliced or shredded (roasted or grilled)
  • ½ cup refried beans black or pinto
  • ½ avocado mashed
  • ¼ cup shredded lettuce romaine or iceberg
  • 1 medium tomato sliced
  • ¼ small onion thinly sliced
  • 2 slices of cheese queso Oaxaca, queso fresco, or Monterey Jack
  • 1 tablespoon mayonnaise or Mexican crema
  • 1 tablespoon chipotle sauce or salsa optional for extra spice
  • 1 teaspoon butter or oil for toasting the bread

Optional Toppings & Add-Ins:

  • Pickled jalapeños or pickled onions – for extra tang
  • Sliced radishes – adds crunch and freshness
  • Hot sauce or salsa verde – for a spicier kick
  • Sour cream or crema drizzle – for a creamy finish

Best Bread Choices for a Torta:

  • The key to a great Mexican torta is choosing the right bread. The best options include:
  • ✔ Bolillo Roll – A classic Mexican bread with a crispy crust and soft interior.
  • ✔ Telera Roll – Slightly flatter and softer making it great for pressing.
  • ✔ Soft Baguette or Ciabatta – A good alternative if bolillo or telera is unavailable.

Instructions

Step 1: Toast the Bread

  • Slice the bolillo or telera roll in half horizontally.
  • Lightly spread butter or oil on the cut sides of the bread.
  • Heat a skillet or griddle over medium heat and toast the bread, cut side down, until golden and slightly crisp. Set aside.

Step 2: Prepare the Base Layers

  • Spread a generous layer of refried beans on the bottom half of the toasted bread.
  • On the top half, spread mayonnaise or Mexican crema. You can also mix crema with a little chipotle sauce for a smoky, spicy flavor.

Step 3: Add the Turkey and Cheese

  • Place your sliced or shredded turkey evenly over the refried beans.
  • Add slices of cheese on top of the turkey.
  • If you prefer a melty texture, place the sandwich open-faced under a broiler or in a hot skillet for a minute or two to melt the cheese slightly.

Step 4: Pile on Fresh Toppings

  • Add a layer of mashed avocado over the melted cheese.
  • Layer shredded lettuce, sliced tomatoes, and thinly sliced onions on top.
  • Include pickled jalapeños or pickled onions if you like more tang and heat.

Step 5: Assemble the Torta

  • Carefully place the top half of the bread over the stacked layers.
  • Press gently to hold everything together, but not so much that it squishes the fillings.

Step 6: Serve the Torta

  • Slice the torta in half for easier handling.
  • Serve immediately while warm and crisp.
  • Pair it with chips, salsa, or a side of black beans for a complete meal.
